Another theory is that carbonara was first invented after 1944, after the liberation of Rome, when food shortages were severe, so bad that the Allied troops were giving out powedered eggs and bacon, which the locals would mix with pasta.

The way carbonara is made these days is by tossing spaghetti with egg yolks, Pecorino Romano cheese, and cured pork jowl (guanciale). This simple dish is a favorite in Rome and other countries.

Lasagne alla Bolognese

This piatto unico (one-dish meal) is a filling and rich dish made with layers of lasagna, topped with a rich meat sauce and béchamel sauce.

Lasagne alla Bolognese is sprinkled with the king of cheeses, Parmigiano-Reggiano, then baked until perfectly crispy on top and tender on the inside. This oven-baked dish is a classic of the Emilia-Romagna region.
