The Ingredients

The basic ingredients as used in the restaurant are just oil, salt, oregano, bell peppers, and onions. That’s it. Five ingredients and you have a side dish that can turn your meal from drab to fab. Of course, you can always make it fancier by adding your preferred veggies into the mix. As long as they cook fast, you can put them in. Some good options include mushrooms, tomatoes, eggplant, beat sprouts, and the like. You can use whatever color of bell pepper you have available or mix different colors to make the plate look more festive. The same is true for the onions. The original recipe uses rice bran oil but olive oil should do just fine.

The Process

Cut the vegetables into long and thin pieces. With the bell peppers, remove the top and bottom. Get rid of the seeds before cutting into strips. Proceed to preparing the other veggies on your list. You may even add chicken strips if you are inclined to have some protein in this dish. Any leftover meat will do as well. Saute everything in a hot pan with a bit of oil. Toss the veggies so that they don’t touch the bottom of the pan for too long. Add in the oregano and fajita seasoning. Five minutes should be enough but you may need more time if you are making a big batch.

It’s done when the vegetables get a bit soft but don’t let them turn soggy. Turn off the heat, transfer contents to a bowl, and serve while hot for optimum satisfaction. Share this with your whole family as a side dish or a main dish with the meat. It will surely be a hit. Be sure to time everything right so that you finish right before mealtime.
